Super high and fast fermentation that ends up in far more higher alcohol. Hart to get out without using a columnar still and that is for vodka or gin. Whiskey should be from a pot or an alembic pot. Idesly with a fairly aggressive downward sloping Lyne arm angle as it results in more flavor.
You really don't want to take what amounts to an unused whisky higher than about 155abv ore it ends up as a very neutral spirit.
The ideal should be 145-150° after a second run. Using a thump keg eith really tight and slow run will get there in one go but assume two runs generally.
